And instead of olive brine, they use the brine from Italian giardiniera. What is Italian giardiniera, you ask? For starters, it’s amazing. Commonly found in jars near the pickles or in the Italian section of the supermarket, giardiniera is a tangy, colorful mix of vegetables like cauliflower, peppers and carrots.
