Today is Cinco de Mayo, and that means you’re probably gearing up to devour mouthwatering tacos and enchiladas washed down by more than a few margaritas (Texas for me, please). It’s a beautiful day of celebration to honor the culture and contributions of Mexican-Americans and a reminder that we all have a hand in creating this tapestry of the American experiment. One of the clearest ways to see how we’ve all had a hand in shaping our society as a whole is through the foods we eat, and nothing compares to the vibrant array of Mexican staples we’re set to enjoy today.
Quesadillas, salsa, guacamole, and all burritos we can eat—sounds like our idea of a perfect Monday if you ask me. Whether you go to your local family-owned Mexican restaurant or choose to whip up your own taco bar at home, there are plenty of wildly flavorful dishes that can make any day taco Tuesday. If you do opt to stay in, but still want a traditional taqueria experience, you might want to consider stopping by Costco to check out their ready-to-eat offerings, perfect no matter what day of the week you choose to celebrate.

The latest mouthwatering find you’ll want to inhale all summer long is a succulent-looking Shrimp Ceviche courtesy of @costcohotfinds, and it’s looking like Cinco de Mayo is going to last the whole month this year. This colorful salad of cooked shrimp, diced red onions, chopped bell peppers, and herbs can be found in the grab-and-go refrigerators at Costco for $10.99 a pound. Additionally, the dish comes with lime for an extra acidic finish, and if you’re looking for a little spice, we recommend finishing with a dash of Tapatio.

You can enjoy it with a spoon, on top of tostones, or with tortilla chips. It’s worth noting that this may not be the most traditional ceviche, as pointed out by several people in the comments. “That ain’t ceviche lol,” said one person. “Shrimp Salad*,” corrected someone else. Regardless, there were plenty of people who thought it looked delicious. “Deliciosooo,” said one person. “Looks so fresh!” remarked someone else. Either way, we’d try it. Who knows? It might turn out to be a hit. We’ll let you be the judge.
