Busy days call for simple meals, and in my house, most days are bustling (to say the least). Whether it’s after-school chaos, all-day meetings or just plain exhaustion, the last thing I want to do is deal with a sink full of dishes after dinner. That’s why I’m always on the lookout for solid one-pan recipes that check all the boxes of quick, hearty, low-maintenance and full of flavor.

Thankfully, there are plenty of mouth-watering meals that meet most, if not all, of this criteria—like One-Pot Creamy Chicken and Noodles, Taco Taters, Martha Stewart’s One-Pan Pasta, Assassin Spaghetti and more.

And now, cookbook author Matthew Bounds (@yourbarefootneighbor) ticks all of those boxes with this comforting sausage and pepper pasta that is all cooked in one pot. We haven’t even gotten into all of the creative ways you can customize this dinner to make sure it has your favorite flavors and ingredients—plus, there are so many healthy additions you can throw in if you’re interested. It’s the kind of easy recipe that makes you feel like you really pulled something off on a hectic day, and your family will think so too!

How to Make One-Pan Sausage Pasta

Start with a pound of ground sausage (any kind you like, or even ground hamburger or turkey). Brown it in a shallow pot over medium heat, breaking it up as it cooks. Once it’s fully browned, drain the excess grease to keep things from getting too oily.

Next, toss in a diced onion and a diced bell pepper. Cook everything together for about 5 minutes, letting the veggies soften and the flavors mingle.

Now add salt, black pepper, garlic powder, red pepper flakes (if you like heat) and Italian seasoning. Stir in a few tablespoons of tomato paste and let it cook down for about 4 minutes. This step deepens the flavor and gives the sauce a rich, concentrated tomato base.

Pour in a can of tomato sauce, a splash of chicken or beef stock and a little heavy cream. This combo creates a silky, savory tomato cream sauce that clings to the pasta.

Bring everything to a boil and add your uncooked short pasta, such as penne, rigatoni or rotini, and stir. Turn the heat down to a simmer, cover the pot and let it cook for about 12 minutes, stirring occasionally so nothing sticks.

When the pasta is tender, remove the lid and let it sit off the heat for a few minutes. This helps the sauce thicken to the perfect consistency.

To finish, stir in a big handful (or two) of freshly grated Parmesan cheese until it melts into the sauce and makes the whole dish creamy, salty and totally irresistible.

Why This Recipe Works for Real Life

This meal is a total weeknight winner because it’s fast, filling and doesn’t leave you with a pile of pots and pans. The sausage adds depth and richness, the veggies bring sweetness and color and the creamy tomato sauce ties everything together.

It’s also easy to customize. You can use turkey sausage for a leaner version, swap in spinach or mushrooms for the bell pepper or add hot sauce for extra heat. You can even toss in frozen peas or kale at the end for a little green boost.

Leftovers (if there are any) reheat beautifully, making this a great option for meal prep. Just store it in an airtight container and microwave with a splash of stock or water to loosen up the sauce.

If your life is busy, your evenings chaotic and your energy low by 6 p.m., this one-pan sausage pasta is a recipe you’ll come back to again and again.

It’s simple, satisfying and it’s guaranteed to become a staple in your weeknight dinner rotation.
